Food For Thought Friday: PIZZA NIGHT!!!

Happy Friday, everyone! I hope your weekend is starting off with a BANG!

Well, on this Food For Thought, I wanted to share my recipe for our pizza dough. Every since the kids were little, Friday has been deemed 'Pizza Night'. I used to buy a frozen one from M&M's but once I learned that what my kids eat effects their behaviour (especially when there are preservatives and other yucky stuff in the food), I decided to start making alot of my own stuff. So I make pasta, pizza dough, bread and many other things. Yes, it's alot of work but, in the long run, it's what's best for my kids and that's all that matters.

So, today I thought I'd share my pizza dough recipe. You can either divide it up and freeze some of it, get the kids to make their own mini pizzas or just cook up a variety of different ones right away. In our case, I divide the dough into four, then I have four weeks worth of pizza dough! OH! And if you have a pizza stone to cook it on, it is AWESOME!

NOTE: I make our dough in the bread machine. What can I say? It does all the hard work for me. ;)

1 1/2 cups warm water
4 tablespoons of extra virgin olive oil
1 tablespoon of sugar
1 tablespoon of salt
7 cups of flour
1 1/2 - 2 teaspoons of yeast

If you're working with a bread machine, simply put all ingredients into the machine in the order I've listed them then hit your 'dough' setting. If bravely doing it by hand, mix all dry ingredients together, make a well in the middle of the dry mixture, then add your wet ingredients and slowly mix together. Knead for a good five minutes then let stand for about 1/2 hour to rise.

After that? Just divvie it up for the freezer, rip it apart for the kids to make their own creations or make your pizzas. It should make about 4 large-sized pizzas.
