Foodie Friday ~ Tofu Egg/Chicken Salad
Yes, I've probably lost a few readers already but, seriously. It's pretty good! Tofu doesn't really have much flavor so it takes on the flavors of what you cook it with or spice it up with.
Since I'm on a high protein/high calorie/low sodium diet, I've been trying to find new ways to get that protein into me. Meat is great, and I am surrounded by 'meat and potatoes' people, but my system is always grateful for a break a couple of times a week.
I don't even have to write a recipe out here as it's kind of a tweak-to-your-taste kind of thing.
Simply have a package of firm tofu that you mash up with a fork or you could use a food processor if you don't want the arm workout. Add a couple of healthy spoonfuls of mayo (I use Vegan mayo simply because I like the taste better but it's up to you), a spoonful of dijon mustard, garlic and salt and pepper.
From there, you'd simply add any other spices you have on hand that you prefer. I've used chicken seasoning (for a bit of chicken salad-like flavor), dill, basil, sometimes even cayenne, pepper flakes or Indian spices. Whatever you're in the mood for.
As well, I think pickles and minced onion are also great additions to give it a bit of a crunch. You
And, there you go. A simple, nutritious meal that is so good! Trust me, you'll surprise yourself.
